Bharwaa gatta



  • Whisk the curd with 2 cups of water, 2 tbsp. of gram flour, chilli and turmeric powder.
  • Mix the remaining gram flour with the ginger paste, salt and soda , add enough water and knead well to make a stiff dough.
  • Set a side for 5 min.
  • In a bowl, mix together the grated cottage cheese, khoya , half the green chilies and salt.
  • Divide the gram flour dough in to 12 equal portions. Flatten each portion and stuff it with the mixture.
  • Shape into cylinders. Cook the stuffed gate in boiling water for 10-15 min.
  • Drain and cut into ½ inch pieces. Heat the oil in kadai: add the cumin seeds, fenugreek seeds, peppercorns, and red chillies, remaining green chillies and asafoetida and sauté for 1 min.
  • Add the whisked cud and cook, stirring continuously for 4-5 min, add the garam masala powder.
  •  Add water if required. Add the cooked gatte to the gravy and continue cooking till the gravy thickens.
  • Garnished with the fresh coriander and serve hot.
