Vegetable Pasta with white sauce

Ingredients:

  • 1 ½ cup pasta
  • 4-5 garlic cloves finely chopped
  • For vegetables:
  • 1 onion
  • ½ capsicum
  • ½ cauliflower
  • ½ cup peas
  • 1 yellow squash
  • ½ zucchini
  • ½ cup cherry tomatoes
  • 1 carrot
  • ½ cup
  •  beans

For sauce:

Method:

  • Boil pasta with some salt and ½ tbsp. of oil, boil for 20 min.
  • Boil cauliflower, peas, green beans and carrot for 10 min.
  • Heat oil in a pan, one by one cook rest of the vegetables on high heat, cook till veggies are slightly brown in color.
  • You can cook onion and capsicum together but you should cook zucchini and yellow squash separately.
  • Finally drain boiled vegetables and cook them on high flame till they are slightly brown in colour.
  • White sauce:
  • Heat pan add butter and melt add all-purpose flour, after mixing flour add milk immediately keep stirring and pressing on lumps till sauce thickening.
  • Add all the seasoning (salt, black pepper. Oregano leaves, and basil leaves)
  • Now combine everything, heat 1 tbsp. oil in a pan add chopped garlic, oregano leaves and basil leaves, add all veggies for 2-4 min, then add pasta white sauce and cherry tomatoes.
