Ratatouille

Method:

  • In a large pot, heat the oil over medium heat adds the onion and garlic, stirring well to prevent sticking. Cook well till onion is soft.
  • Dice the vegetables into ½ inch pieces keep all in same size.
  • Add the vegetables cook for 5 min.
  • Add tomato puree and herbs (basil. Oregano, parsley) add salt and pepper stir well and turn down heat to low.
  • Cook covers about 30 min or until vegetable are tender.
  • Serve ratatouille over rice, pasta or bread.
  • Garnish with grated cheese.
